Delicious and Nourishing: Chanterelle Mushroom Recipes for Your Stomach

Chanterelle mushrooms are a particularly delicious and stomach-nourishing ingredient. When made into various soups, they are not only delicious but also nutritious, and they have excellent stomach-nourishing effects when paired with different ingredients.
 


 

  I: Steamed Egg with Chanterelle Mushrooms

  【Ingredients】

  Chanterelle mushrooms, eggs

  【Instructions】

  1. Before preparing, soak the chanterelle mushrooms in water.

  2. After soaking, remove from water and drain. Cut into small pieces and add an appropriate amount of water. Store in the refrigerator for easy access.

  【Tips】

  Before making steamed egg with chanterelle mushrooms, take out a spoonful of diced mushrooms and place them in a small bowl. Crack an egg into the bowl and mix well with chopsticks. Add a small amount of salt. Steam the mixture in a pot over boiling water and then consume. This method allows you to taste the fragrant flavor of the chanterelle mushrooms and also nourishes the stomach.

  II: Stewed Pork Ribs with Chanterelle Mushrooms

  【Ingredients】

  5 chanterelle mushrooms, 5 shiitake mushrooms, 500g pork ribs, Sichuan peppercorns, ginger slices, yellow wine, red dates (as needed)

  【Instructions】

  1. Wash the pork ribs and cut them into small pieces. Boil them in boiling water for 5 minutes, then add yellow wine to remove the blood and drain.

  2. Soak the chanterelle mushrooms in water until soft (for at least 8 hours, you can soak them after dinner). Squeeze out excess water and remove the root and dirt.

  3. Blanch the mushrooms in boiling water for 40 minutes, then remove and squeeze out excess water. Tear them into small pieces and set aside.

  4. In a stew pot, add water, pork ribs, chanterelle mushrooms, shiitake mushrooms, yellow wine, ginger slices, red dates, and Sichuan peppercorns. Boil over high heat for 30 minutes.

  5. After boiling, reduce to medium heat and simmer for about 2 hours until the pork ribs are tender.

  【Tips】

  1. Good quality dried chanterelle mushrooms are brown or golden in color. When purchasing, choose mushrooms that are intact, with complete hair and large, plump bodies.

  2. Chanterelle mushrooms have a bitter taste, so adding cooking wine during the cooking process can help remove the bitterness.

  3. Be sure to fully soak the chanterelle mushrooms before cooking to soften them. Otherwise, they will be bitter and chewy. Do not skip this step.

  III: Light Chanterelle Mushroom Vegetarian Soup

  【Ingredients】

  2 chanterelle mushrooms, 3 matsutake mushrooms, 3 dried longans, 3 red dates, mung bean sprouts (as needed), salt (as needed)

  【Instructions】

  1. Take 2 chanterelle mushrooms, about 30g, and soak them in water. Squeeze out excess water and repeat this process several times to reduce the mushroom's bitterness.

  2. Use scissors to cut off the old roots of the chanterelle mushrooms and tear the soaked mushrooms into small pieces.

  3. Wash the matsutake mushrooms, dried longans, and red dates.

  4. Put all the ingredients into an electric stew pot and cook until the chanterelle mushrooms are soft and tofu-like. Add mung bean sprouts and cook briefly. Add salt to taste. Done!
