[Delicious Sea Urchin Tomato Pasta]

  [Sea Urchin Tomato Pasta]

  

  Ingredients:

  

  1 tomato, some sea urchin, some olive oil, 1 cup white wine, 1 serving of wide pasta, 1 basil leaf, some cheese

  
          

 

  Instructions:

  

  1. Boil water for the pasta;

  

  2. Clean the tomato and cut into pieces;

  

  3. Add a tablespoon of salt to the boiling water and cook the pasta;

  

  4. Cook the pasta over medium-high heat without covering for about 8-10 minutes (Note: Cooking without covering will make the pasta more chewy. The cooking time depends on the type of pasta used. Wide pasta like the one I used needs a longer cooking time);

  

  5. Heat olive oil in another pan over medium heat, then add the tomato and stir-fry;

  

  6. Pour in the white wine and let it simmer;

  

  7. Taste and season the sauce;

  

  8. Add some cheese;

  

  9. Add the cooked pasta and stir-fry, taste and season;

  

  10. Turn off the heat or reduce to low heat, add 1-2 pieces of sea urchin and mix well with the pasta;

  

  11. Plate the pasta;

  

  12. Top with a piece of sea urchin for decoration, sprinkle with chopped basil, and drizzle with some olive oil.

  
          

 

  Tips:

  

  1. Regarding the use of tomatoes, regular large tomatoes that are not very red are not suitable for this dish. The redder the tomato, the more acidic it is. So the kind of tomatoes we usually eat, which are not very red, are not acidic enough and not suitable. Try to choose tomatoes with very bright colors, including the stems. If you can't find them, you can use regular tomatoes and add some canned tomato sauce and a little lemon juice to increase the acidity.

  

  2. In order to preserve the flavor of sea urchins, I added them after turning off the heat. The purpose is to retain the sweetness of the sea urchins as much as possible.
