【Ingredients】

Main Ingredients: Soaked sea cucumber 500g, lean pork 300g

Auxiliary Ingredients: Eggs 200g, water chestnuts 75g

Seasonings: Spring onions 20g, ginger 10g, Sichuan peppercorns 5g, cooking wine 10g, starch (pea) 20g, sesame oil 10g, appropriate amount of each.

【Cooking Method】

1. Blanch the soaked sea cucumber in boiling water and remove the moisture inside the body. Coat the outside with a layer of dry starch and set aside. Crush the spring onions, ginger, and Sichuan peppercorns separately, then extract the juice by adding cooking wine and water.

2. Mix the minced pork, spring onion, ginger, and Sichuan peppercorn juice together. Add beaten eggs and mix well. Then add water chestnut powder, salt, pepper, monosodium glutamate, and a little dry starch to make the filling. Stuff the filling into the bellies of 10 sea cucumbers.

3. Heat the oil in a pan, add spring onions and cooking wine, then add broth, soy sauce, a little salt, and sugar to season. Place the sea cucumbers with the filling facing down, and simmer over low heat until cooked. Then flip the sea cucumbers and continue to simmer to absorb the flavor. Remove them and place them on a plate. Season the remaining sauce, thicken it, and pour it over the sea cucumbers. Finally, drizzle with Sichuan peppercorn oil.
