1: Braised Pork Belly
【Ingredients】
500g pork belly, 3 teaspoons of sugar, 1 spring onion, 2 star anise, 3 pieces of cinnamon, 2 tablespoons of dark soy sauce, 2 tablespoons of cooking wine
【Instructions】
1. Slice the ginger and cut the spring onion into sections.
2. Cut the pork belly into cubes and blanch them in boiling water for 5 minutes. Remove and rinse with cold water.
3. Heat 2 tablespoons of oil in a frying pan, add the sugar, and stir constantly in one direction until the sugar melts and starts to bubble. Then add the pork belly and stir-fry to evenly color the meat.
4. Add the cooking wine and continue stir-frying for 5 minutes. Then add water to the pan (just enough to cover the meat by two fingers).
5. Bring to a boil and then simmer on low heat for about 40 minutes, until the meat is tender. Remove any excess oil before serving.
2: Twice Cooked Pork
【Ingredients】
350g pork leg with skin, 50g garlic sprouts, 1 tablespoon of Pixian sweet bean paste, 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 1 teaspoon of sugar
【Instructions】
1. Boil the pork leg in water until cooked and the skin is soft. Remove and let it cool. Then cut it into slices about 5cm long, 4cm wide, and 2cm thick.
2. Cut the garlic sprouts into diamond-shaped sections.
3. Heat the frying pan, add some oil, and stir-fry the sliced pork until it releases oil and curls slightly.
4. Add the Pixian sweet bean paste and stir-fry until fragrant. Then add the soy sauce, sugar, and cooking wine, and stir-fry until well mixed.
5. Finally, add the garlic sprouts and stir-fry for a few more seconds until cooked.
3: Steamed Garlic Shrimp
【Ingredients】
10 shrimp, 10 fresh white shrimp, 2 tablespoons of minced garlic, 2 tablespoons of vegetable oil, a pinch of white pepper powder, salt to taste
【Instructions】
1. Clean the shrimp and make a cut along the back (do not completely cut through), remove the digestive tract.
2. Mix the minced garlic, white pepper powder, and salt, and spread it on the shrimp.
3. When the water in the steamer is boiling, steam the shrimp for 3-4 minutes on high heat. Then transfer them to another plate.
4. Mix the remaining steaming juice with a little light soy sauce and dark soy sauce, and evenly pour it over the steamed shrimp.
5. Finally, sprinkle with chopped spring onion and heat the vegetable oil until hot. Drizzle it over the shrimp and serve while hot.
4: Sweet and Sour Spare Ribs
【Ingredients】
500g spare ribs, 1 piece of ginger, 1 section of spring onion, 1 tablespoon of dark soy sauce, 2 tablespoons of sugar, 2 tablespoons of vinegar, spring onion for garnish, salt to taste
【Instructions】
1. Choose fatty spare ribs, as using lean spare ribs for this dish is not as tasty. Chop the spare ribs into small pieces, wash and drain. Use kitchen paper to absorb the surface moisture.
2. Slice the ginger and cut the spring onion into thick slices.
3. Heat the pan over high heat, add oil, and when the oil is about 50% hot, reduce to medium heat. Add the spare ribs and fry for 3 minutes, turning each piece with chopsticks, and then fry for another 2 minutes.
4. When the spare ribs turn golden brown and most of the moisture has evaporated, add salt, dark soy sauce, vinegar, ginger slices, and spring onion. Stir-fry for a moment, then pour in warm water, bring to a boil over high heat, and then reduce to low heat and simmer for 30 minutes.
5. When the spare ribs change color and you can smell the aroma of various seasonings, add sugar and spring onion. Turn up the heat and reduce the sauce until thickened.
