Delicious Pumpkin Recipes for a Spooky Halloween

We all know that pumpkins are a symbol of Halloween. Although Halloween is a Western ghost festival, it is actually not scary at all. Children can go trick-or-treating and enjoy various delicious treats while wearing cute monster costumes. Below, I have a few pumpkin recipes for Halloween that will allow you to enjoy the temptation of food in this spooky atmosphere.

 

Recipe 1: Pumpkin Pie

Ingredients: 300g pumpkin, 300g glutinous rice flour.

Seasoning: 100g cooking oil, 20g powdered milk, 40g honey.

Method: 1. Wash and peel the pumpkin, steam until soft, and mash it into a puree. 2. Add honey and powdered milk, stir well, and let it cool. 3. When the pumpkin puree has cooled, gradually add glutinous rice flour and mix well. Let it sit for 30 minutes. 4. Shape the pumpkin dough into desired shapes and set aside. 5. Heat cooking oil in a pan, reduce heat, and add the shaped pumpkin dough. Cook slowly until cooked through.

Recipe 2: Pumpkin Cheesecake

Ingredients: 1 9-inch pie crust, 120g cream cheese, 35g sugar, 1 egg, 200g cooked pumpkin puree, 5g cornstarch, 40g milk, 60g whipped cream.

Method: 1. After making the pie crust, poke small holes with a fork and press some red beans on top. 2. Preheat the oven to 190 degrees Celsius and place the pie crust on the middle rack. Bake for about 20 minutes until the surface turns golden. 3. Cut the pumpkin into slices, microwave on high heat for about 6 minutes, and mash into a puree. 4. Mix softened cream cheese and sugar at room temperature, heat over a water bath, and whisk until the sugar melts and the cheese mixture is smooth. Add an egg and mix well. 5. Mix cornstarch and milk, then add to the cheese mixture. Add the pumpkin puree and mix well. Pour the mixture into the pre-baked pie crust. 6. Preheat the oven to 175 degrees Celsius, place on the middle rack, and bake for 35 minutes until the cheesecake is firm and golden on top.

 

Recipe 3: Pumpkin Rice

Ingredients: 400g pumpkin, 200g rice, 2 tablespoons cooking oil, 1 teaspoon salt, 500ml water.

Method: 1. Peel and seed the pumpkin, then cut it into small pieces. Rinse the rice. 2. Heat 2 tablespoons of cooking oil in a frying pan until hot, then add the pumpkin and stir-fry for 1 minute. 3. Add the rinsed rice and pumpkin to the frying pan and stir-fry until well mixed. Add about 500ml of water, just enough to cover the rice. Cover the pan and simmer over medium heat for 10 minutes. Then, remove the lid, add salt, and stir-fry until all the water has evaporated.

Recipe 4: Steamed Pork with Pumpkin

Seasoning: Salt, cooking wine, scallions.

Method: 1. Cut the pumpkin into pieces and arrange them on a plate. Cut the pork belly into 1.5cm pieces and lightly pound them with the back of a knife. Add a little salt and cooking wine, marinate for 10 minutes. 2. Mix the marinated pork belly with rice flour. 3. Place the pork belly on top of the pumpkin, steam for 30 minutes, and sprinkle with chopped scallions before serving.

 

Recipe 5: Braised Pork Ribs with Pumpkin

Ingredients: Pumpkin, pork ribs.

Seasoning: Lee Kum Kee spicy bean sauce, cooking wine, soy sauce, garlic.

Method: 1. Cut the pork ribs into pieces, soak in water with a little cornstarch for 20 minutes to remove blood, then drain. Peel and cut the pumpkin into pieces, mince the garlic. 2. Heat the pan over high heat, add the drained pork ribs, and cook until slightly oily. Remove from the pan. 3. Leave some oil in the pan, add a small amount of peanut oil, and sauté the minced garlic over low heat. 4. Increase the heat, add the pork ribs and pumpkin to the pan, stir-fry until well mixed, then pour in cooking wine and stir-fry until the alcohol evaporates. 5. Add Lee Kum Kee spicy bean sauce, stir-fry until well mixed. 6. Add water, enough to cover the ingredients in the pan. Bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes. 7. Add soy sauce for seasoning, then add salt to taste. Cook over high heat until the sauce thickens.

In addition to trying out these pumpkin recipes, I suggest drinking hot porridge in the autumn. Drinking porridge helps sweat, dissipate heat, and dispel wind and cold. It can effectively prevent colds and promote digestion. Starting the day with a big bowl of hot porridge on an empty stomach can nourish the stomach without burdening the digestive system or causing obesity.
