There is a story about Pi Zha: In the Ming and Qing dynasties, there was a poor family in the suburbs of Zhangde Prefecture. One day, guests came to their house, but the family was too poor to afford meat, so they fried some vegetables and eggs and served them with wine.

They were planning to make a large pot of dish using the leftover noodles and Pi Zha from their house, but the noodles were all used up, and only a pile of noodle crumbs and Pi Zha crumbs were left. The host had no choice but to put the two kinds of crumbs into a pot of boiling water. However, there was too much water and the mixture became too thin. So, the host decided to thicken it with some flour paste. As a result, the mixture in the pot became thicker.

After a while, the host returned to the kitchen and found that the mixture in the pot had cooled down, but to his surprise, the noodle crumbs and Pi Zha crumbs had solidified into a block, even harder than usual cold noodles. So, the host cut the solidified noodle and Pi Zha mixture into pieces and cooked it together with other vegetables and tofu to make a "large pot dish" that people often eat. When the guests tasted it, they found the texture chewy and the taste delicate, feeling that they had never eaten such delicious food before. They asked the host what this delicacy was called, and the host thought for a moment and told them it was called "Pi Zha", the abbreviation of noodle crumbs.
