【Instructions】
1. Cook the Chinese yam and remove the skin. Wash the honey dates with warm water, cut them in half, and remove the pits. Wash the pork fat and let it dry.
2. Remove the pits from the cherries and set aside. Grease a bowl with lard and line the bottom with the pork fat. Place the cherries in the center and surround them with the honey dates.
3. Cut the Chinese yam into 3-4cm long sections, then cut them into 4 slices lengthwise. Arrange the slices on top of the honey dates.
4. Layer the Chinese yam slices and sprinkle a layer of white sugar in between. Drizzle some lard on top and add sugar and osmanthus on the top layer. Steam until cooked.
5. When serving, remove the bowl, invert it onto a plate, and remove the pork fat. Meanwhile, pour clear water into a pot, add sugar to dissolve, and thicken it with water starch. Pour the sauce over the Chinese yam.
