Braised Pork Ribs with Cordyceps and Fig
【Ingredients】
150g pork ribs, 10g cordyceps, 4 figs, 10 goji berries, 4 slices of ginger, a pinch of salt
【Steps】
1. Wash the pork ribs, slice the ginger, soak the cordyceps in water for 3 minutes, and wash the figs and goji berries;
2. Boil water and blanch the pork ribs until the color changes;
3. Remove the pork ribs and rinse off the foam with cold water;
4. Put the pork ribs in a clay pot and add enough water;
5. Add the cordyceps, figs, and goji berries;
6. Finally, add the ginger slices, bring to a boil over high heat, then simmer for about two hours. Add a pinch of salt before serving.
【Notes】
1. Soak the cordyceps in water for 2-3 minutes and wash them, no need to soak for too long;
2. After blanching the pork ribs, rinse off the foam, otherwise the soup will not be clear enough;
3. When adding cordyceps, the soup will turn yellow, which is a normal phenomenon as long as the soup is clear and odorless;
4. Cordyceps is not suitable for making raw soups, it is best to simmer it on low heat to fully release its nutrients and benefits;
5. Cordyceps should be kept dry to prevent it from getting damp and moldy;
6. Do not add too much salt, otherwise it will mask the sweet taste of the soup.
