The Different Ways to Cook Fish: A Delicious and Healthy Tradition

Chinese people have a special preference for fish, and during the Chinese New Year, every family's dining table must have a braised fish. Fish is a good aquatic food for nourishment, not only delicious but also beneficial for health. Different fish have different effects and functions. So what are the different ways to cook fish?

Braised Carp with Red Beans

Ingredients: 1 carp, 150g soaked red beans, oil, 5 slices of ginger, garlic slices, 1 scallion, starch, vinegar, soy sauce, salt, cooking wine, chopped green onion

Instructions:

1. Rinse the processed carp repeatedly, remove any blood, and pat a little dry starch on the fish.

2. Heat some oil in a pan, and fry the fish over low heat without flipping it with a spatula. Instead, gently shake the pan to cook the fish until one side is firm. Then flip the fish with a spatula and fry the other side until both sides are golden brown. Add the sautéed ginger, garlic, and scallion.

3. Along the edge of the pan, sprinkle a little vinegar, add enough water to submerge the fish, and pour in the soaked red beans. Increase the heat.

4. Add a little soy sauce, bring the pot to a boil, skim off any foam with a spoon, add some cooking wine, simmer over low heat for 20-30 minutes, season with salt, sprinkle some chopped green onion, and serve.

Simmering a large carp without intestine and scales and consuming it separately can treat jaundice. Simmering soup with live carp and pig's trotters and consuming it can treat insufficient lactation in pregnant women. Boiling carp with a little powdered Fritillaria cirrhosa and consuming the soup can treat cough and asthma.

Crucian carp is good for tonifying middle energizer, warming the stomach, and nourishing the skin. It is a food for tonifying middle energizer and health preservation.

Catfish is good for tonifying Qi and stomach, promoting diuresis, dispelling wind, and relieving agitation. The trace elements like zinc and selenium it contains are helpful for anti-cancer.

Boiling black fish with ginger and red dates can assist in the treatment of tuberculosis. Stewing black fish with brown sugar can treat nephritis. Steaming black fish can promote lactation and blood circulation in postpartum women.

Squid is good for nourishing the liver and kidney, tonifying Qi and blood, clearing the stomach, and relieving heat. It is a health food for women, with functions such as nourishing blood, improving vision, regulating menstruation, promoting fetal development, assisting childbirth, stopping bleeding, and promoting lactation.

Hairtail is good for warming the stomach, tonifying deficiency, nourishing the skin, dispelling wind, killing parasites, and tonifying the five viscera.
