[Chenpi Oil Dripping Chicken]
Recipe: 1 chicken (about 1500 grams), 20 grams of chenpi.
Preparation: Add half of the chenpi, ginger, scallion, peppercorn, and a small amount of salt to 1000-1500 ml of water, then put the clean chicken into the pot and cook until 60% cooked. Remove the chicken from the pot. Boil the broth in the pot and then add the chicken. Cook the chicken over low heat until fully cooked, then remove and set aside. Leave a small amount of broth in the pot, add 10-30 grams of rock sugar, a small amount of monosodium glutamate, and salt, and simmer until a sauce is formed. Spread the sauce on the surface of the chicken. Heat cooking oil in another pan, add the remaining chenpi, and fry until crispy. Pour the hot oil onto the chicken repeatedly until the color becomes bright red. Then, brush sesame oil on the surface of the chicken, cut it into small pieces, and plate it. Preparation: Shred the carrot, marinate the pork shreds with salt and yellow wine, soak the chenpi until soft and shred it. Stir-fry the carrot until cooked, then remove from the pan. Stir-fry the pork shreds and chenpi in oil for 3 minutes, then add the carrot shreds, a pinch of salt, and yellow wine. Stir-fry until dry, add a small amount of water and simmer for 3-5 minutes, then garnish with scallions.
