1. Carrot with Salted Egg Yolk

Ingredients: Carrots, salted egg yolks, scallions.

Directions: Place the egg yolks in a bowl, add a little cooking wine, and steam on a rack for fifteen minutes. Cut the carrots into slightly thick strips and steam on the rack over high heat for five minutes. After the salted egg yolks have cooled, crush five to six of them into a small bowl. If there is any excess water in the steamed carrots, pour it out. Heat oil in a frying pan, add the crushed egg yolks, and stir-fry over low heat.
