Tremella fuciformis, also known as white fungus, is a type of edible mushroom that is popular in Chinese cuisine. It is often used in soups and desserts for its health benefits. How to cook dried white fungus to maximize its nutritional value? Here are a few recipes to try.

Snow Lotus Seed White Fungus Soup

Ingredients:

About 20 snow lotus seeds (wolfberries), 10 dried white fungus, half a piece of tremella fuciformis, yellow rock sugar.

Instructions:

1. Soak the snow lotus seeds and dried white fungus in water for at least 12 hours.

2. Soak the tremella fuciformis and tear it into small pieces.

3. Put all the ingredients and yellow rock sugar in a pot with water. Boil and simmer for about 2 hours until all the ingredients are soft and sticky.

Red Date and Longan White Fungus Dessert

Ingredients:

8 pieces of dried white fungus, a suitable amount of yellow rock sugar, water, 4 red dates, 6 dried longan.

Instructions:

1. Soak the dried white fungus in water for 12-15 hours, changing the water twice. I usually soak it overnight and cook it after work the next day.

2. Remove any impurities from the soaked white fungus.

3. Soak the red dates and dried longan in hot water.

4. Boil the soaked white fungus with enough water. Simmer on low heat for 30-40 minutes. Add yellow rock sugar, red dates, and dried longan. Simmer for another minute and remove from heat.

5. The cooked white fungus should be translucent and amber in color. You can add lotus seeds, coix seed, or other ingredients according to your preference.

Soapberry Rice Red Date Goji Berry Soup with White Fungus

Ingredients:

15g white fungus, 15g soapberry rice, 10g goji berries, 5 red dates, a suitable amount of rock sugar.

Instructions:

1. Soak the white fungus for more than 15 hours.

2. Soak the soapberry rice for more than 10 hours.

3. Wash the goji berries and red dates. Clean the impurities from the white fungus.

4. Put all the ingredients in a double boiler with enough water. Remove any foam.

5. Cook in the double boiler for 2 hours. Add a suitable amount of rock sugar before serving.

White Fungus Fresh Pear Soup

Ingredients:

2 snow pears, 20g white fungus, 4 red dates, 100g traditional brown sugar, a small handful of goji berries, 2000ml water.

Instructions:

1. Wash and peel the snow pears, remove the core, and cut into small cubes.

2. Wash the red dates and goji berries.

3. Soak the white fungus for at least 10 hours and remove any impurities.

4. Put the snow pears, white fungus, red dates, and goji berries in a container. Pour warm water over them and cover with heat-resistant cling film.

5. Steam in a pot for 1 hour. Add traditional brown sugar in the last 10 minutes.

White Fungus and Lotus Seed Milk

Ingredients:

A suitable amount of lotus seeds, a suitable amount of white fungus, a suitable amount of rock sugar, a little fresh milk, a suitable amount of apricot (juice).

Instructions:

1. Soak the white fungus in water overnight.

2. Put the white fungus and lotus seeds in a pot and simmer for 2 hours in a double boiler.

3. Add rock sugar or condensed milk and honey to taste.
