  Ingredients: 1 crucian carp fish head, 500g tender tofu, appropriate amount of bean paste, green garlic, Shaoxing wine, ginger, soy sauce, sugar, cooked bamboo shoots, soaked shiitake mushrooms, 500g cooked vegetable oil, 1kg fresh broth, a little cooked lard.

  

  Method: Wash the crucian carp fish head, make two deep cuts on both sides of the meat, spread chopped bean paste on it, marinate with soy sauce for a while, so that the fish head can absorb the salty flavor. Heat the wok over high heat, add oil, heat until 80% cooked, put the fish head in the wok, fry until golden on one side, then flip and fry the other side for a while, add Shaoxing wine and ginger juice, cover and simmer for a while, then add oil, sugar, and fresh broth, cover and simmer until 80% cooked, then add tofu slices, bamboo shoots, and shiitake mushrooms. Bring to a boil over high heat, pour into a large clay pot, simmer over low heat for a while, add green garlic and drizzle with cooked lard, and it's ready to serve.
