The Art of Ajax: Processing Donkey-Hide Gelatin

Ajax, also known as donkey-hide gelatin or Fuzhi gelatin, is mentioned in the "Shennong Bencao Jing". It is a solid gelatin block processed from the skin of the donkey, a member of the Equus asinus Linnaeus family. Donkey skin can be harvested all year round. The skin is soaked in water to soften it, the hair is removed, and it is chopped into small pieces. It is then soaked in water to whiten it, boiled in hot water, and when the skin rolls up, it is removed and boiled in a pot. After the gelatin solidifies, it is poured out and cut into small pieces.

3. "Pu Huang Chao Ajiao": Place the Pu Huang in a pot and heat it over medium heat until it slightly changes color. Add the Ajax pieces and stir-fry continuously until it swells into a round ball shape and there is no runny center. Remove it, sift out the Pu Huang, and let it cool.
