Honey, also known as stone honey or stone syrup, is a type of honey produced by the Chinese honeybee (Apis cerana Fabr.) or the Italian honeybee (A.mellifera L.), as mentioned in the book "Shennong Bencao Jing".
【Preparation Method】1. Honey: "Remove impurities" according to the book "Ru Men Shi Qin". "Filter through silk cloth to remove impurities" as mentioned in the book "Pu Ji Fang". Currently, the original honey is taken and heated in a pot over low heat until it boils. Then, it is filtered while still hot to remove foam, impurities, and dead bees.
2. Refined Honey: "All must be boiled on fire first, remove the foam, and let it have a slight yellow color" as explained in the book "Bencao Jing Ji Zhu". "Boil until the foam is gone" according to the book "Qian Jin Yi Fang". Nowadays, clean honey is taken and boiled in a pot over low heat until it slightly darkens in color and becomes stickier, then it is taken out and cooled down.
