【Grilled Lobster with Miso and Sea Urchin】
Main Ingredients: 300g lobster, 50g sea urchin
Additional Ingredients: 20g ginger, 20g Japanese perilla leaves
Seasoning/Marinating: 30ml fish broth, 150g miso, 100g fermented soybean paste, 12g yuzu, sake
Preparation:
1. Pour fish broth over the lobster and sea urchin meat three times;
2. Sprinkle sea urchin meat mixed with Japanese perilla leaves onto the lobster;
3. Marinate the miso with Japanese sake, yuzu flesh, and seasoning;
4. Finally, grill the lobster and miso mixture for 5 minutes.
