Ingredients for Sea Urchin Fried Rice:
Main ingredient: 70g sea urchin
Additional ingredients: 1 egg, 2 bowls of rice, a suitable amount of Chinese mustard greens
Seasoning: 20g ginger
Method for Sea Urchin Fried Rice:
Preparation:
1. Mix 20g of ginger paste with 70g of sea urchin meat.
2. Beat the egg and fry it in a pan until it becomes crumbled.
3. Cut the Chinese mustard greens into small pieces, preferably including the roots.
4. Stir-fry the mixed sea urchin meat with scallion oil until it becomes a paste.
Cooking Tips for Sea Urchin Fried Rice:
1. Normally, the sea urchin meat should be stir-fried with the egg. However, I wanted to see the individual grains of sea urchin yellow when eating, purely to satisfy my own desires.
2. I had a small failure with the rice. I cooked the rice in a pressure cooker, so it ended up more sticky than rice cooked in a rice cooker or other pots, making it more difficult to stir-fry. I must remember to correct this next time.
