Salt and Pepper Baiguo
Main ingredients
150g Baiguo, 30g Yunhui (Yunhui is a type of preserved meat), 2 egg whites, 1/2 teaspoon salt, 100g flour, 30g starch.
Instructions
1. Remove the hard shell of Baiguo and fry it in a pan until the skin is about to fall off. Take it out and drain it, then soak it in cold water to remove the skin and rinse it. Cut Yunhui into small 1cm square pieces and thread the Baiguo and Yunhui onto skewers.
2. Beat the egg whites and mix with salt and flour. Then add starch and mix well. Dip the Baiguo into the batter.
3. Heat salad oil in a frying pan until it is 50% hot. Add the Baiguo and fry for 10 minutes. Remove it with a slotted spoon and continue heating the oil until it is 70% hot. Put the Baiguo back in and fry until golden brown. Remove and place on a plate, sprinkle with salt and pepper, and it's ready to serve.
Ginkgo White Jade
Main ingredients
300g fresh river shrimp, 100g Ginkgo nuts, 4g salt, 1 egg white, 5g dry starch, 5g wet starch, 5g cooking wine.
Instructions
1. Rinse the shrimp and remove any dirt. Use a clean towel to absorb excess moisture. Put it in a bowl and add salt, cooking wine, ginger juice, monosodium glutamate, and egg white. Mix until sticky. Then add dry starch and mix well to make a batter.
2. Pour the Ginkgo nuts into a pan with oil heated to 40% hot, and cook until they are cooked. Remove them from the pan and let them cool, then peel off the outer skin and set aside.
3. Clean the pan and place it over medium heat. Add salad oil and heat it to 40% hot. Pour in the shrimp batter and stir until it turns white. Then add the Ginkgo nuts, stir briefly, and drain the oil with a slotted spoon.
4. Add chicken broth, ginger juice, cooking wine, salt, monosodium glutamate, and chicken essence to the pan. Adjust the seasoning to your taste. Add wet starch and mix to thicken the sauce. Then add the Ginkgo nuts and shrimp, stir evenly, drizzle with sesame oil, and serve.
Honey-Glazed Ginkgo Nuts
Main ingredients
50g fresh Ginkgo nuts, 50g honey, 10g sugar, 150g white sugar.
Instructions
1. Crush the Ginkgo nuts, remove the shells, and put them in a pot of boiling water for about 10 minutes. Take them out.
2. Clean the pot, add 400g of water, and bring it to a boil. Add the Ginkgo nuts and simmer briefly.
3. Add white sugar and honey. Thicken with wet starch and sprinkle with sugar and osmanthus.
Ginkgo Nut and Pork Rib Soup
Main ingredients
Ginkgo nuts, pork ribs, ginger, Sichuan peppercorns, star anise, salt, cooking wine.
Instructions
1. Prepare a package of Ginkgo nuts from the supermarket. Cut the pork ribs into pieces and wash them.
2. Put the pork ribs in a pot with ginger, star anise, and cooking wine. Bring to a boil over high heat and skim off any impurities and foam.
3. Reduce the heat and simmer the pork ribs.
4. When the pork ribs are about 70-80% cooked, add the Ginkgo nuts and continue simmering until the ribs are tender. Add salt to taste before serving.
Ginkgo Nut and Snow Pear Soup
Ingredients
2 snow pears, 10 Ginkgo nuts, honey to taste.
Instructions
1. Peel and core the snow pears, then cut them into small cubes. Remove the flesh from the Ginkgo nuts and wash them.
2. Bring a pot of water to a boil and add the pear cubes and Ginkgo nuts. Cook until tender.
3. Add honey and stir well.
