Sautéed Eggplant with Spicy Sauce
Ingredients: Eggplant, scallions, minced garlic, dried red chili peppers, spicy bean sauce, oyster sauce, sugar, salt, apple cider vinegar, chicken bouillon.
Instructions: 1. Wash the eggplant, leave the skin on, and cut it into strips. Finely chop the dried red chili peppers.
2. Heat oil in a wok over high heat. Add the eggplant strips and fry for about 4 minutes until they are soft and translucent. Remove from the wok and drain the excess oil.
3. Leave a little oil in the wok and heat it until it is 60% hot. Add the chopped dried red chili peppers and spicy bean sauce, stir-fry until fragrant. Add the fried eggplant strips, stir-fry evenly, then add minced garlic, white sugar, salt, and oyster sauce. Stir-fry until the sauce thickens, then add apple cider vinegar and chicken bouillon. Mix well and turn off the heat.
4. Transfer the sautéed eggplant to a plate and sprinkle with chopped scallions.
Fried Bamboo Shoots
Ingredients: Tender bamboo shoots (300g), small red chili peppers (10g), green bell peppers (10g), salt, monosodium glutamate, vegetable oil.
Instructions: 1. Wash the bamboo shoots and cut them into 4cm long and 1cm wide strips.
2. Heat oil in a pan, fry the bamboo shoot strips until they release water, then remove them. When the oil temperature rises, fry them until they turn golden brown, then remove and drain the oil.
3. Heat a little oil in a pan, stir-fry the bamboo shoots, add salt and monosodium glutamate, and it's ready to serve.
