Maidong Pea Jelly
Ingredients: 20g Maidong, 150g Peas, 200g Sugar, 2g Agar, a little Qingmei and Guihua.
Method: Boil the peas until soft, then remove the skins by rubbing through a sieve. Cook the agar with Maidong until the agar melts, then add sugar and Qingmei and Guihua. Spread the pea puree in a bowl, then mix in the agar syrup. Cool and freeze in the refrigerator.

Ingredients: 10g Jinyinhua, 10g Maidong, 100g fresh mushrooms, 100g shredded pork, 3 dried mushrooms, 3 eggs.
Method: Chop Jinyinhua and Maidong into small pieces. Dice the mushrooms, marinate the shredded pork with a little egg white, soak the dried mushrooms until soft, then slice them.
