There are many ways to eat shepherd's purse. (5) Add the flour to the bowl and mix well to form a batter.
(6) Heat a non-stick pan and add a little salad oil. When the oil is 60% hot, pour in a small amount of batter and spread it thinly.
(7) It is best to cover the pan during the cooking process. This makes it easier to cook through and you can cook only one side if you prefer.
(8) Cut off the uneven edges of the pancake and arrange them on a plate. Serve with black rose pickles.
2. Shepherd's Purse Dumplings
Ingredients:
500g wheat flour, 600g shepherd's purse, 50g dried shrimp, 5g salt, 3g MSG, 5g soy sauce, 10g spring onion, 30g vegetable oil, 10g sesame oil
Instructions:
(1) First, remove any impurities from the shepherd's purse and wash it with clean water.
(2) Finely chop the shepherd's purse and place it in a bowl.
(3) Add dried shrimp, salt, MSG, soy sauce, spring onion, vegetable oil, and sesame oil to the bowl of shepherd's purse. Mix well to make the filling.
(4) Mix the flour with water to form a dough of moderate softness. Knead well.
(5) Roll the dough into a long strip and cut it into small pieces. Roll out the dumpling wrappers.
(6) Fill the wrappers with the filling and shape them into dumplings.
(7) Boil the dumplings in boiling water until cooked, then remove and place in bowls.
(8) Dip in sauce and serve.
3. Shepherd's Purse Wonton
Ingredients:
Shepherd's purse, minced meat, egg, salt, chicken essence, soybean oil, ginger, spring onion
Instructions:
(1) Prepare the ingredients: shepherd's purse.
(2) Wash the shepherd's purse and blanch it in boiling water.
(3) Cool the blanched shepherd's purse in cold water.
(4) Squeeze out the water and chop the shepherd's purse finely.
(5) Mix minced meat, egg, salt, chicken essence, cooking wine, soybean oil, ginger, and spring onion together.
(6) Mix well. You can now wrap the wontons.
(7) When wrapping the wontons, make sure they are arranged neatly and not facing each other.
(8) Boil water in a pot, add some salt, and cook the wontons. When the wontons float to the surface, add cold water once and bring to a boil again.
4. Shepherd's Purse Tofu Soup
Ingredients:
200g tender tofu, 100g shepherd's purse, 25g carrot, diced soaked shiitake mushrooms
Instructions:
(1) Tender tofu, cooked bamboo shoots, water gluten.
(2) Remove impurities from the shepherd's purse, wash it, and cut it into fine pieces.
(3) Wash the carrot and blanch it in boiling water. Remove and let it cool, then dice it.
(4) Heat a wok, add oil and heat until 70% hot, then add vegetable stock, tofu cubes, shiitake mushroom cubes, carrot, bamboo shoot cubes, gluten, shepherd's purse, salt, ginger, and bring to a boil. Add MSG, thicken the soup with wet starch, drizzle with sesame oil, and serve in soup bowls.
5. Shepherd's Purse Stir-Fried Eggs

150g shepherd's purse, 3 eggs, cooking oil, salt
Instructions:
