【Ingredients】

Pork belly, prickly bamboo shoots

Green onion, ginger, garlic, cooking wine, rock sugar, dark soy sauce (a little bit), Sichuan peppercorns, star anise, cinnamon, dried chili peppers, salt

【Instructions】

1. Wash and cut the pork belly into pieces. Blanch in boiling water, then remove and drain.

2. Peel and cut the prickly bamboo shoots into pieces. Blanch in boiling water with a little salt, then remove and rinse.

3. Prepare green onion, ginger, garlic, star anise, Sichuan peppercorns, cinnamon, and dried chili peppers.

4. Heat the pork belly in a pan over medium heat until the oil is slowly rendered.

5. In the rendered oil from the pork belly (if there is too much oil, you can remove some), add the rock sugar and cook over low heat until it turns yellow and forms small bubbles.

6. Once the rock sugar has melted and small bubbles have formed, immediately add the pork belly and continue stirring over low heat to brown.

7. Add cooking wine, a little dark soy sauce (adjust according to desired color), and all the other seasonings except for salt. Then add the prickly bamboo shoots and stir-fry.
