【Preparation of Ci Zhu Sun】
1. Wash and cut the pork belly into chunks, blanch in boiling water and remove to drain.
2. Peel and cut the bamboo shoots into chunks, blanch in boiling water with a little salt, then remove and rinse.
3. Prepare green onions, ginger, garlic, star anise, Sichuan peppercorns, cinnamon, and dried chili peppers.
4. Heat the oil in a wok over medium-low heat and slowly render the fat from the pork belly.
5. In the rendered fat (you can remove some if desired), add rock sugar and cook on low heat until it turns yellow and starts to bubble.
6. Once the rock sugar has melted and produced yellow bubbles, immediately add the pork belly and continue stir-frying over low heat until it is evenly colored.
7. Add cooking wine, a little dark soy sauce (adjust according to desired color), and all the other seasonings except for salt. Stir-fry together with the bamboo shoots.
