Ingredients for Yam and Red Date Congee
Main ingredients: 100g glutinous rice, 75g coix seed
Auxiliary ingredients: 50g dried yam, 25g lotus rhizome, 10g dried red dates
Seasoning: 20g granulated sugar
Method for making Yam and Red Date Congee
1. Wash the glutinous rice and coix seed separately, soak in cold water for 3 hours, remove and drain the water;
2. Peel and wash the lotus rhizome and yam, and grind them into powder separately;
3. Remove the pits from the red dates, wash and set aside;
4. Put the coix seed and glutinous rice into a pot, add enough cold water, and cook over high heat until the rice grains bloom;
5. Add the red dates to the pot and simmer over low heat to make congee;
6. When the glutinous rice is soft and cooked, sprinkle the yam powder into the pot while stirring, and cook for about 20 minutes;
7. Add the lotus rhizome powder and granulated sugar to the pot, stir well, and serve.
