1. After buying the fresh shrimp, soak them in clean water for 30-60 minutes to let them spit out the dirt in their stomachs.
2. Cut off the shrimp whiskers and sharp front pincers, use a toothpick to remove the shrimp line, rinse with running water several times, and drain.
3. Slice the ginger and cut the scallions into sections.
