1. Prepare the pork filling. Slice the ginger and garlic, and cut the green onion into pieces. Add a few Sichuan peppercorns. Pour in two tablespoons of potato starch and mix well with an appropriate amount of water to form a starch-water mixture. The starch-water mixture will make the meat tender and smooth.

2. Heat some oil in a pan and add a few Sichuan peppercorns to fry until fragrant. If the pork filling is lean, you can add more oil.

3. Pour the pork filling into the pan and stir-fry over high heat. When the pork filling is half white and half red, add a little cooking wine, and then add the green onion, ginger, and garlic.
