1. Rice Root and Fish Congee
Ingredients: 30g rice root, 1 fresh carp (about 120g), 100g glutinous rice.
Instructions:
First, wash the rice root to remove any dirt and sand. Then, put it in a clay pot and boil 600ml of water. Remove the rice root and set it aside.
Remove the scales from the fresh carp, gut it, and wash it. Then, put it in the clay pot along with the glutinous rice. Add the cooked rice root water and cook the congee over low heat. Season and serve.
2. Rice Root and Mud Loach Stew
Ingredients: 20-30g rice root, 90-120g mud loach, 2-3 slices of ginger.
Instructions:
Wash the rice root thoroughly with water. Wash the mud loach with hot water to remove the mucus, gut it, and fry it over low heat until golden brown.
Then, put the rice root and ginger in a clay pot. Add 1500ml of water (about 6 bowls of water) and bring it to a boil. Reduce the heat and simmer until there are 2-3 bowls of water left. Season with salt and a little vegetable oil.
Usage: This amount is suitable for 1-2 people. Drink the soup and eat the fish. Children can drink the soup separately without eating the fish. If used for medicinal purposes, it can be taken continuously for 3 days.
