Shanji
Artificially raised shanji has tender and delicious meat with a strong wild taste. Its protein content is as high as 30%, which is twice that of regular chicken and pork. Its fat content is only 0.9%, which is 1/39 of pork, 1/8 of beef, and 1/10 of chicken. It is basically cholesterol-free (see table below) and is a high-protein, low-fat wild food.
Wild chickens have been royal tribute throughout history. Emperor Qianlong of the Qing Dynasty praised it after eating, and wrote the phrase "Famous for three thousand miles in the north, taste surpasses the twelve floors of Jiangnan". Vice Chairman of the National Committee of the Chinese People's Political Consultative Conference, Ye Xuanping, commented after eating, "Good-looking, delicious, with a wild taste." Famous nutritionist Yu Ruomu also gave high praise to the nutritional composition of wild chickens.
Sending shanji as a gift is considered a high-end present, and serving it to guests is a rare delicacy. It is also a reserved dish for entertaining heads of state at the White House in the United States. Therefore, there is a surge in the market for sending shanji every year before and after the Spring Festival. However, the shanji mentioned here refers to the silver pheasant. It is illegal to eat eagles.
