Daliang ginger is the rhizome of the ginger family plant, Zingiber officinale var. rubrum. The rhizomes are harvested from February to March, washed, and dried before use. It has the effect of warming the stomach and dispelling cold. Now let me introduce the usage of Daliang ginger to everyone.
【Uses of Daliang Ginger】
The reason why Daliang ginger is favored is that its spicy flavor is milder than that of raw ginger, and it does not contain elements like "ginger protease".
In fact, Daliang ginger has not disappointed chefs and has indeed become an indispensable ingredient that cannot be replaced by raw ginger.
When Daliang ginger is used in brine, it not only replaces raw ginger to remove fishy or gamey smell, but also plays an important role in "fixing the taste". Simply put, Daliang ginger can both disperse unpleasant odors and retain fragrant flavors.
The function of fixing the fragrance of Daliang ginger is different from the fragrance enhancing function I mentioned in a previous article about "kaempferia galanga". Enhancing fragrance means to bring out hidden or undeveloped scents.
Fixing fragrance means to stabilize the floating aroma, so that it can not only be smelled, but also tasted.
【Methods of Cultivating Daliang Ginger】
Daliang ginger prefers warm and humid climate and sunny environment. It is slightly drought-tolerant but afraid of waterlogging. It can withstand short-term temperatures as low as 0°C, but the whole plant will die at -5°C. It is suitable for cultivation in soils with deep plow layer, loose and fertile, and good drainage.
Propagation by seeds: Use seedling transplanting method. Harvest the fruits and remove the husks in November to December. Sow the seeds in April to May of the second year, on a high ridge with a width of 1.3 meters.
Propagation by division: It can be done during the summer rainy season every year. Dig out plants with a section of rhizome, and cut the aboveground stems about 33 cm from the ground for planting.
In the field management, strengthen the management in the first 1-2 years after planting. Cultivate and fertilize 3 times a year in June, August, and December. After harvesting in December, cultivate again and apply compost and calcium superphosphate once. In the first 1-2 years after planting, intercrop leguminous dwarf crops or vegetables.
