Chunpu Guiyuan Soup

  

  Ingredients

  

  150g quail meat, 100g guiyuan meat (dried longan), 25g lotus root powder, 2g osmanthus, 250ml chicken broth, 10g fresh ginger, some rock sugar, and salt to taste.

  

        



 

Preparation of Chunpu Guiyuan Soup

  

  (1) Wash the quail meat and guiyuan meat separately, then dice them into small pieces. Peel the ginger and lightly crush it.

  

  (2) Boil some water in a pot and blanch the quail meat. Remove and place it in a small bowl. Add chicken broth, ginger, rock sugar, guiyuan meat, salt, cover tightly, and steam in a steamer for 20 minutes until cooked through. Remove from heat.

  

  (3) Wash the pot clean and pour the steamed quail meat into it. Add the guiyuan meat and bring to a boil. Then add the osmanthus and thicken with lotus root powder. Serve in bowls.
